Amazing Mediterranean Potato Salad

A refreshing and flavorful Mediterranean potato salad that combines the richness of turkey bacon with fresh vegetables and herbs.

  • 2 pounds potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine cooked turkey bacon, tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Once the potatoes are cool, cut them into bite-sized pieces and add them to the bowl with the other ingredients.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
