Anthony Bourdain’s Beef Stew

A rich and flavorful beef stew inspired by Anthony Bourdain, featuring turkey bacon for a unique twist.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the beef to the pot and brown on all sides.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the carrots, potatoes, and the cooked turkey bacon.
  5. Pour in the beef broth and red wine, then add tomato paste, thyme, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours, or until the beef is tender.
  7. Remove bay leaf before serving.

Notes

  • For a thicker stew, mash a few pieces of the potatoes and stir back in.
  • Feel free to add other vegetables like peas or green beans for variety.
