- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices turkey bacon, chopped
- 1 large onion, diced
- 3 carrots, chopped
- 3 potatoes, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the beef to the pot and brown on all sides.
- Add the onion and garlic, cooking until softened.
- Stir in the carrots, potatoes, and the cooked turkey bacon.
- Pour in the beef broth and red wine, then add tomato paste, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours, or until the beef is tender.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mash a few pieces of the potatoes and stir back in.
- Feel free to add other vegetables like peas or green beans for variety.
