Anti-Inflammatory Glow Bowl

Ingredients

  • 1 cup quinoa
  • 1 cup spinach
  • 1/2 cup chickpeas
  • 1/2 avocado sliced
  • 1/4 cup cherry tomatoes halved
  • 2 tbsp tahini
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper

Instructions

  1. Cook the quinoa according to package instructions.
  2. In a bowl, combine spinach, chickpeas, and cherry tomatoes.
  3. Add the cooked quinoa and mix well.
  4. Top with avocado slices.
  5. In a small bowl, whisk together tahini, olive oil, lemon juice, turmeric, and black pepper.
  6. Drizzle the dressing over the bowl and serve.
