2 ripe bananas
1 cup rolled oats
1/2 cup almond butter
1/4 cup honey
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup chopped nuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
In a mixing bowl, mash the ripe bananas until smooth.
Add the rolled oats, almond butter, honey, vanilla extract, baking powder, and salt. Mix until well combined.
If using, fold in the chopped nuts.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 25-30 minutes until golden brown and set. Allow to cool before cutting into bars.
