  • 1 pound chicken breast
  • 2 cups brown rice
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup spicy mayo
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a pan, heat sesame oil over medium heat. Add chicken and cook until browned and cooked through, about 6-7 minutes.
  3. Add garlic powder, ginger, and soy sauce to the chicken, stir well, and cook for another 2 minutes.
  4. In a separate pot, steam broccoli florets and carrots until tender.
  5. Assemble the bowls by adding rice, chicken, steamed vegetables, and drizzle with spicy mayo.
  6. Garnish with chopped green onions.
