- 1 pound salmon fillet
- 1 cup panko breadcrumbs
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- Preheat your oven to 400°F (200°C).
- Cut the salmon fillet into bite-sized pieces.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Dredge each piece of salmon in flour, then dip in eggs, and finally coat with panko.
- Place the coated salmon pieces on a baking sheet lined with parchment paper.
- Bake for about 12-15 minutes or until golden and cooked through.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and salt for the sauce.
- Serve the salmon bites with the sauce on the side.
