  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the salmon fillet into bite-sized pieces.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Dredge each piece of salmon in flour, then dip in eggs, and finally coat with panko.
  5. Place the coated salmon pieces on a baking sheet lined with parchment paper.
  6. Bake for about 12-15 minutes or until golden and cooked through.
  7. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and salt for the sauce.
  8. Serve the salmon bites with the sauce on the side.

Notes

  • For extra crunch, you can fry the bites instead of baking them.
