Butternut Squash

A delicious and easy recipe for stuffed butternut squash with turkey bacon.

  • 1 medium butternut squash
  • 6 slices turkey bacon
  • 1 cup cooked quinoa
  • 1/2 cup shredded cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half and scoop out the seeds.
  3. Drizzle olive oil over the squash and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, cook the turkey bacon until crisp, then remove and crumble.
  6. In the same skillet, sauté onion and garlic until fragrant.
  7. Add cooked quinoa, crumbled bacon, and cheese to the skillet and mix well.
  8. Once the squash is done, fill each half with the mixture.
  9. Return to the oven for an additional 10 minutes to melt the cheese.
  10. Serve warm.

Notes

  • Feel free to customize the filling with your favorite vegetables.
  • For a vegetarian option, omit the turkey bacon.
