Cattle Drive Casserole

A comforting and delicious casserole perfect for any occasion.

  • 1 pound turkey bacon
  • 1 cup chopped onion
  • 2 cups frozen mixed vegetables
  • 3 cups cooked rice
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook turkey bacon until crispy. Remove and crumble.
  3. Sauté onion in the bacon drippings until translucent.
  4. In a large bowl, combine cooked turkey bacon, sautéed onion, mixed vegetables, rice, cheese, soup, and milk. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake for 30 minutes, until heated through and cheese is bubbly.

Notes

  • For a spicier version, add diced jalapeños.
  • Leftovers taste great reheated the next day.
