Chicken and Spinach Casserole

  • 2 cups cooked chicken, shredded
  • 3 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 8 ounces pasta (any shape)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, spinach, ricotta, half of the mozzarella, and half of the Parmesan.
  3. Season the mixture with garlic powder, onion powder, salt, pepper, and red pepper flakes.
  4. Cook the pasta according to package instructions and drain.
  5. Add the cooked pasta to the chicken mixture and stir until well combined.
  6. Transfer the mixture to a greased baking dish.
  7. Top with remaining mozzarella and Parmesan.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, consider adding herbs like basil or oregano.
  • Using leftover chicken makes this recipe even easier.
