Chicken Thigh Osso Bucco

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, carrots, and celery to the pot and sauté until softened.
  5. Add garlic and cook for an additional minute.
  6. Pour in white wine, scraping the bottom of the pot.
  7. Add chicken broth, thyme, and bay leaves.
  8. Return chicken thighs to the pot, cover, and simmer for 45 minutes.
  9. Remove bay leaves before serving.
