Chicken Wild Rice Casserole

A comforting chicken wild rice casserole that features turkey bacon for a flavorful twist.

  • 1 cup wild rice
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 6 slices turkey bacon, cooked and chopped
  • 1 cup cream of mushroom soup
  • 1 cup frozen peas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large saucepan, combine wild rice and chicken broth. Bring to a boil, then reduce heat to low and simmer for about 45 minutes or until rice is tender.
  3. In a large bowl, mix the cooked rice, chicken, turkey bacon, cream of mushroom soup, peas, garlic powder, onion powder, and black pepper.
  4. Transfer the mixture to a greased 9×13 inch baking dish, and sprinkle with cheese on top.
  5. Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.

Notes

  • You can substitute chicken with turkey or any preferred meat.
  • For a vegetarian option, replace the meat with additional vegetables.
