Comforting French Onion Pot Roast

  • 3 pounds beef chuck roast
  • 4 slices turkey bacon
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large oven-safe pot, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, sear the beef chuck roast on all sides until browned.
  4. Add the onions and garlic, cooking until softened.
  5. Stir in beef broth, Worcestershire sauce, thyme, salt, and pepper.
  6. Return the turkey bacon to the pot. Cover and roast in the oven for 3-4 hours, or until the meat is tender.
  7. Serve warm with desired sides.

Notes

  • For an extra depth of flavor, consider adding mushrooms to the pot.
