Comforting French Onion Pot Roast

A delicious and hearty pot roast featuring the flavors of French onion soup, enhanced with turkey bacon and fresh herbs.

  • 3 pounds beef chuck roast
  • 8 slices turkey bacon
  • 2 cups onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium heat.
  3. Add turkey bacon and cook until crispy. Remove and set aside.
  4. In the same pot, add onions and garlic. Sauté until softened.
  5. Season the beef chuck roast with salt and pepper, then sear it in the pot until browned on all sides.
  6. Add the beef broth, Worcestershire sauce, thyme, and bacon back to the pot.
  7. Cover and cook in the oven for 3-4 hours, until the meat is tender.

Notes

  • For extra flavor, let the roast marinate overnight.
  • Serve with mashed potatoes or crusty bread.
