Comforting Loaded Baked Potato Soup

A warm and hearty loaded baked potato soup that combines turkey bacon and chicken ham for a comforting dish.

Ingredients

  • 4 large potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chives, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Dice the potatoes and add them to the pot along with the chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use a potato masher to mash some of the potatoes for a creamy texture while leaving some chunks.
  6. Stir in the chicken ham, sour cream, cheese, salt, and pepper. Cook until the cheese melts.
  7. Serve hot, garnished with chives.

Notes

  • This soup can be customized with your choice of toppings such as extra cheese, bacon, or green onions.
  • For a vegetarian version, omit the meats and use vegetable broth.
