- 4 large potatoes
- 1 cup turkey bacon, chopped
- 1 cup chicken ham, diced
- 1 cup shredded cheese
- 1/2 cup sour cream
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chives, chopped
- In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the chopped turkey bacon and cook until crispy.
- Dice the potatoes and add them to the pot along with the chicken broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture while leaving some chunks.
- Stir in the chicken ham, sour cream, cheese, salt, and pepper. Cook until the cheese melts.
- Serve hot, garnished with chives.
