Cranberry Apple Twice-Baked Sweet Potatoes

A delightful recipe combining the flavors of cranberry and apple in twice-baked sweet potatoes.

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 2 apples, peeled and diced
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Bake sweet potatoes for about 45 minutes until tender.
  4. In a saucepan, combine cranberries, diced apples, brown sugar, cinnamon, and nutmeg, and cook until cranberries burst.
  5. Once sweet potatoes are cool, cut them in half and scoop out the flesh.
  6. Mix the sweet potato flesh with the cranberry-apple mixture and Greek yogurt.
  7. Fill the sweet potato skins with the mixture.
  8. Top with chopped pecans and bake for an additional 15 minutes.
