- 1 pound cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until soft.
- Stir in the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in the heavy cream and half of the cheese until melted and combined.
- Serve hot, topped with the remaining cheese.
Notes
