Ingredients

  • 1 pound cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until soft.
  2. Stir in the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Stir in the heavy cream and half of the cheese until melted and combined.
  5. Serve hot, topped with the remaining cheese.

  • For a spicier version, add jalapeños to the soup.
