Creamy Corn Chowder

A deliciously creamy corn chowder that combines the sweetness of corn with the savory crunch of turkey bacon, perfect for a cozy meal.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups corn (fresh, frozen, or canned)
  • 3 cups vegetable broth
  • 2 cups heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the fat in the pot.
  2. Heat olive oil in the same pot, then add the onion and garlic, cooking until softened.
  3. Add the corn and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and thyme, then season with salt and pepper.
  6. Chop the turkey bacon and add back to the chowder before serving.

Notes

  • This chowder can be served with crusty bread for dipping.
  • For a lighter version, substitute half-and-half for heavy cream.
