Creamy Garlic Butter Tuscan Salmon

A delicious and easy recipe for Creamy Garlic Butter Tuscan Salmon that makes for a perfect weeknight meal.

Ingredients

  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Season salmon fillets with salt and pepper.
  2. Cook salmon for about 4-5 minutes on each side until cooked through. Remove from pan.
  3. In the same pan, melt butter and add garlic, sauté for 30 seconds.
  4. Add cherry tomatoes and spinach, and cook until spinach wilts.
  5. Pour in heavy cream and Italian seasoning, stirring until combined.
  6. Return salmon to the pan and spoon the sauce over the fillets. Cook for another 2 minutes.
  7. Serve warm, garnished with additional herbs if desired.

Notes

  • For a spicier dish, add crushed red pepper flakes.
  • Can substitute shrimp for salmon if preferred.
