Creamy Vegetarian Gnocchi Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 package (16 ounces) gnocchi
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Pour in the vegetable broth and add the carrots and celery. Bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Stir in the heavy cream and Italian seasoning, and season with salt and pepper.
  6. Add the spinach and cook for an additional 2 minutes until wilted.
  7. Serve hot and enjoy!

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a lighter version, substitute heavy cream with coconut milk.
