  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup sugar for topping

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until combined.
  3. Press the mixture into the bottom of each cupcake liner.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  6. Fold in heavy cream gently.
  7. Spoon the batter over the crust in each cupcake liner.
  8. Bake for 18-20 minutes or until the centers are set. Let cool completely.
  9. Sprinkle sugar on top of each cupcake and use a kitchen torch to caramelize the sugar.
