- 1 pound salmon fillets
- 1 cup panko breadcrumbs
- 2 tablespoons mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups mixed greens
- 1 cup cooked rice
- 1/4 cup sliced green onions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and black pepper.
- Cut the salmon into bite-sized pieces and dip each piece into the sauce mixture, then roll in panko breadcrumbs.
