Crispy Bang Bang Salmon Bites Bowls

  • 1 pound salmon fillets
  • 1 cup panko breadcrumbs
  • 2 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mixed greens
  • 1 cup cooked rice
  • 1/4 cup sliced green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and black pepper.
  3. Cut the salmon into bite-sized pieces and dip each piece into the sauce mixture, then roll in panko breadcrumbs.
  4. Place the salmon bites on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes until golden and crispy.
  6. Serve over cooked rice and mixed greens, and garnish with sliced green onions.

Notes

  • For extra crunch, broil the salmon bites for the last 2 minutes of cooking.
  • Adjust the spiciness by varying the amount of sriracha.
