  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 8 hoagie rolls
  • 8 slices provolone cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chuck roast on all sides until browned.
  2. Transfer the roast to a crockpot.
  3. Add sliced onion, minced garlic, beef broth, soy sauce, Worcestershire sauce, and dried thyme over the roast.
  4. Cover and cook on low for 8 hours or until the meat is tender.
  5. Shred the meat with two forks and mix it with the juices.
  6. Serve on hoagie rolls with provolone cheese.
