Cuban Mojo Pork Recipe

A delicious and flavorful Cuban dish featuring marinated beef in a zesty mojo sauce.

  • 2 pounds pork shoulder
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a large bowl, combine the orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, black pepper, and red pepper flakes.
  2. Place the pork shoulder in a resealable bag and pour the marinade over the meat. Seal the bag and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat the oven to 300°F (150°C).
  4. Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade.
  5. Cover the pork with foil and roast for 3 to 4 hours, or until tender.
  6. During the last hour, uncovered, baste the meat with the reserved marinade.
  7. Once done, let the pork rest for 15 minutes before slicing.

Notes

  • This dish pairs well with rice and black beans.
  • For a spicier kick, add more red pepper flakes.
