- 2 pounds chuck roast
- 1 pound bone-in beef short ribs
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon ground cumin
- 1 tablespoon oregano
- 1 teaspoon smoked paprika
- 2 dried guajillo chiles, stems removed
- 2 dried ancho chiles, stems removed
- 4 cups beef broth
- 10 corn tortillas
- 1 cup cilantro, chopped
- 1 lime, cut into wedges
- 1 cup diced onion
- 1 cup crumbled queso fresco
- In a large pot, combine the chuck roast, beef short ribs, chopped onion, minced garlic, bay leaves, ground cumin, oregano, and smoked paprika.
- Toast the dried guajillo and ancho chiles in a dry skillet for a few minutes until fragrant.
- Add the toasted chiles and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
- Remove the meat from the pot and shred it using two forks. Return the shredded meat to the pot and stir it well.
- Heat the corn tortillas on a skillet until warm. Fill each tortilla with the birria meat and top with cilantro, diced onion, and queso fresco. Serve with lime wedges.
Notes
- You can use other cuts of beef if desired.
