Easy Chili Mac

Ingredients

  • 1 pound elbow macaroni
  • 2 cups turkey bacon, chopped
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the elbow macaroni and stir for a couple of minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the black beans, diced tomatoes, chili powder, and cumin.
  5. Reduce the heat and let simmer until the pasta is cooked, about 10-12 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a spicier version, add jalapeños.
