Easy Chili Mac

Easy Chili Mac is a comforting weeknight dish that combines the delicious flavors of chili with the classic comfort of macaroni and cheese.

  • 1 pound turkey bacon
  • 1 cup elbow macaroni
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 can kidney beans
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheddar cheese
  • salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the elbow macaroni and toast for a minute.
  3. Add the beef broth, diced tomatoes, kidney beans, chili powder, and cumin.
  4. Bring to a boil, then reduce heat and simmer until the pasta is tender.
  5. Stir in the cooked turkey bacon and shredded cheese until melted.
  6. Season with salt and pepper to taste.

Notes

  • For a spicier dish, add jalapeños or a dash of hot sauce.
  • Feel free to use ground turkey or beef in place of turkey bacon if preferred.
