Easy Cowboy Cornbread Casserole

A delicious and hearty casserole combining cornbread, turkey bacon, and chicken ham.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 cup cooked turkey bacon, chopped
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. Add the milk, vegetable oil, and eggs, mixing until well combined.
  4. Fold in the turkey bacon, chicken ham, and shredded cheese.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool slightly before serving.

Notes

  • For extra flavor, add jalapeños or green chilies to the mixture.
  • Serve with a side of salsa or hot sauce for a kick.
