  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 2 cups mashed potatoes
  • 1 cup diced carrots
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup beef or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the turkey bacon until crisp, then remove and crumble.
  3. Add the onion, garlic, carrots, and cook until tender.
  4. Stir in the ground turkey and cook until browned.
  5. Add the crumbled bacon, tomato paste, broth, thyme, salt, and pepper; simmer for 5 minutes.
  6. Transfer the turkey mixture to a baking dish, then top with mashed potatoes.
  7. Bake for 25-30 minutes until golden brown.
