Easy Shepherd’s Pie Casserole

A delicious and hearty shepherd’s pie casserole made with turkey bacon and chicken ham, perfect for a family meal.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups mashed potatoes
  • 1 cup mixed vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add ground turkey and turkey bacon, cooking until browned.
  4. Stir in chicken ham and mixed vegetables, and add chicken broth, thyme, salt, and pepper. Simmer for 5 minutes.
  5. Transfer the mixture to a baking dish and spread mashed potatoes on top.
  6. Bake for 25-30 minutes until golden and bubbly.

Notes

  • For a vegetarian version, substitute ground turkey with lentils or mushrooms.
  • Make sure to season the mashed potatoes for extra flavor.
