2 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 cup unsalted butter, chilled and diced
6 to 8 tablespoons ice water
6 apples, peeled, cored, and sliced
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 egg yolk
1 tablespoon milk
Instructions
Preheat the oven to 425°F (220°C).
In a bowl, mix the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Stir in the ice water, one tablespoon at a time, until the mixture forms a ball.
Roll out the dough on a floured surface and fit it into a pie pan.
In another bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
Pour the apple mixture into the pie crust.
Roll out the remaining dough and place it over the filling. Seal and cut slits in the crust to allow steam to escape.
Mix the egg yolk with milk and brush the mixture over the crust.
Bake for 15 minutes in the preheated oven. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes until apples are soft and crust is golden brown.
Allow to cool before serving.
Notes
For best results, use a mix of sweet and tart apples.
Serve with vanilla ice cream for added indulgence.
