1 cup diced onion
2 cloves garlic, minced
1 pound cooked chicken, shredded
4 slices turkey bacon, cooked and crumbled
2 cups orzo pasta
4 cups chicken broth
1 cup shredded cheese (such as Swiss or Gruyere)
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent.
Add the garlic and cook for another minute.
Stir in the shredded chicken, crumbled turkey bacon, orzo, chicken broth, thyme, salt, and pepper.
Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
Transfer the mixture to a greased baking dish, top with shredded cheese, and cover with foil.
Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Let cool for a few minutes before serving.
Notes
For extra flavor, you can add sautéed mushrooms or bell peppers.
