- 8 ounces elbow macaroni
- 4 slices turkey bacon
- 1 medium onion, sliced
- 2 tablespoons butter
- 4 cups beef broth
- 2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- In the same pot, melt butter and sauté onions until caramelized.
- Add beef broth and thyme, bringing to a simmer.
- Stir in the cooked macaroni and cheeses. Mix until creamy.
- Finish with crumbled turkey bacon and season with salt and pepper.
