  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 medium onion, sliced
  • 2 tablespoons butter
  • 4 cups beef broth
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same pot, melt butter and sauté onions until caramelized.
  4. Add beef broth and thyme, bringing to a simmer.
  5. Stir in the cooked macaroni and cheeses. Mix until creamy.
  6. Finish with crumbled turkey bacon and season with salt and pepper.
  7. Serve hot.

Notes

  • This dish can be made with regular bacon for a richer flavor.
  • For a vegetarian version, omit the bacon and use vegetable broth.
