A delightful twist on the classic chicken pot pie, featuring turkey bacon for extra flavor.

  • 1 cup turkey bacon, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 pie crust

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat.
  3. Add onions and garlic; sauté until translucent.
  4. Stir in carrots, peas, and potatoes; cook for about 5 minutes.
  5. Add turkey bacon and cooked chicken; mix well.
  6. Sprinkle flour over the mixture and stir to combine.
  7. Slowly pour in chicken broth and milk, stirring constantly until thickened.
  8. Season with thyme, salt, and pepper.
  9. Pour the mixture into a pie crust.
  10. Cover with another crust, seal edges, and cut slits for steam.
  11. Bake for 30-35 minutes until golden brown.

Notes

  • For a richer flavor, you can add a splash of white wine to the filling.
  • Feel free to use leftover turkey if available.
