  • 2 cups cooked quinoa
  • 4 pieces grilled chicken breasts, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Prepare quinoa according to package instructions and set aside.
  2. Grill chicken breasts until cooked through, then slice.
  3. In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and olives.
  4. Prepare the dressing by whisking together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve quinoa mixture topped with sliced chicken and crumbled feta cheese.
