  • 1/2 cup honey or maple syrup
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add honey (or maple syrup), melted coconut oil, eggs, and vanilla extract; mix well.
  4. Stir in baking soda, salt, and cinnamon.
  5. Gradually mix in whole wheat flour until just combined. Fold in nuts if using.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
