- 1 pound chicken breast, diced
- 4 cups cauliflower rice
- 1 cup broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup low-fat cheddar cheese, shredded
- 1 teaspoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
- Add diced chicken breast to the skillet, and cook until it is no longer pink.
- Stir in cauliflower rice, broccoli, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to a baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
