  • 1 pound chicken breast, diced
  • 4 cups cauliflower rice
  • 1 cup broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-fat cheddar cheese, shredded
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
  3. Add diced chicken breast to the skillet, and cook until it is no longer pink.
  4. Stir in cauliflower rice, broccoli, paprika, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.

Notes

  • This casserole can be frozen for up to 3 months.
