- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup frozen mixed vegetables
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 package refrigerated biscuit dough
- Preheat the oven to 400°F (200°C).
- In a pot, bring the chicken broth to a boil and add the chicken breasts. Cook until no longer pink, then shred the chicken.
- In another pan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Slowly add the milk, whisking until the mixture is thickened. Stir in the shredded chicken, mixed vegetables, thyme, and rosemary.
- Pour the mixture into a baking dish.
- Top with biscuit dough and bake for 20-25 minutes, or until the biscuits are golden brown.
Notes
- For a richer flavor, add some garlic when cooking the butter.
