Herb Biscuit Chicken Pot Pie

An easy and comforting chicken pot pie recipe with herb biscuits, perfect for a family dinner.

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 package refrigerated biscuit dough

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pot, bring the chicken broth to a boil and add the chicken breasts. Cook until no longer pink, then shred the chicken.
  3. In another pan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  4. Slowly add the milk, whisking until the mixture is thickened. Stir in the shredded chicken, mixed vegetables, thyme, and rosemary.
  5. Pour the mixture into a baking dish.
  6. Top with biscuit dough and bake for 20-25 minutes, or until the biscuits are golden brown.

Notes

  • For a richer flavor, add some garlic when cooking the butter.
  • You can use leftover chicken for a quicker meal.
