  • 1 pound ground turkey
  • 1 cup turkey bacon, chopped
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 4 cups hash browns, thawed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey and turkey bacon until browned.
  3. Add mixed vegetables and cook until tender.
  4. Stir in the cream of mushroom soup and mix well.
  5. In a greased baking dish, layer half of the hash browns.
  6. Spread the turkey mixture over the hash browns.
  7. Top with the remaining hash browns and sprinkle with cheese.
  8. Bake for 30-35 minutes or until cheese is bubbly and golden.

Notes

  • For a vegetarian option, omit turkey and use vegetable broth.
  • Feel free to add your favorite spices for extra flavor.
