- 1 pound ground beef
- 1 cup carrots, diced
- 1 cup peas
- 1 cup corn
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups mashed potatoes
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh thyme
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onions and garlic to the skillet, cooking until soft.
- Stir in carrots, peas, corn, tomato paste, beef broth, Worcestershire sauce, and thyme. Season with salt and pepper.
- Simmer for 10 minutes until thickened.
- Transfer the mixture to a baking dish and top with mashed potatoes.
- Bake in the preheated oven for 25-30 minutes until the top is golden.
- Let sit for a few minutes before serving.
