1 pound ground turkey
4 slices turkey bacon
2 cups mashed potatoes
1 cup frozen peas
1 cup chopped carrots
1 tablespoon olive oil
1 onion diced
2 cloves garlic minced
1 tablespoon tomato paste
1 cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
Instructions
Preheat your oven to 400°F (200°C).
In a skillet, cook the turkey bacon until crispy. Remove and chop.
In the same skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
Add ground turkey, cooking until browned. Stir in tomato paste, beef broth, Worcestershire sauce, thyme, peas, carrots, and chopped bacon.
Simmer for 10 minutes, then transfer mixture into a baking dish.
Spread mashed potatoes on top of the turkey mixture.
Bake in the preheated oven for 25-30 minutes, until the top is golden.
Notes
For a creamier mashed potato topping, add a bit of butter and milk.
