  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the turkey bacon until crispy, then set aside and crumble.
  3. In the same skillet, add ground turkey, onion, carrots, and garlic. Cook until the turkey is browned and the vegetables are tender.
  4. Stir in the crumbled bacon, frozen peas, tomato paste, and beef broth. Simmer for about 10 minutes.
  5. Meanwhile, boil potatoes in salted water until tender. Drain and mash with milk and butter until smooth.
  6. Spread the turkey mixture in a baking dish and top with the mashed potatoes. Sprinkle with cheese.
  7. Bake for 25-30 minutes or until the top is golden brown.
