Jalapeno Popper Roasted Potato Salad

A creamy and spicy potato salad packed with flavor from jalapenos, turkey bacon, and a delightful dressing.

Ingredients

  • 2 pounds baby potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup jalapenos, diced
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chives, chopped

Instructions

  1. Boil the baby potatoes until tender, approximately 15-20 minutes.
  2. Drain and let the potatoes cool before cutting them into halves.
  3. In a large bowl, combine the sour cream, mayonnaise, apple cider vinegar, garlic powder, onion powder, salt, and pepper.
  4. Add the potatoes, turkey bacon, jalapenos, and chives to the bowl and mix until well combined.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra heat, leave some seeds in the jalapenos.
  • Can be made a day in advance for better flavor.
