Jalapeno Popper Roasted Potato Salad

A creamy and spicy potato salad with a jalapeno popper twist, complemented by turkey bacon.

Ingredients

  • 2 pounds baby potatoes
  • 1 cup diced jalapenos
  • 1 cup crumbled turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil the baby potatoes in salted water until tender, then drain and let cool.
  2. In a mixing bowl, combine cream cheese, sour cream, and mayonnaise.
  3. Mix in diced jalapenos, turkey bacon, cheddar cheese, garlic powder, salt, and black pepper.
  4. Once the potatoes are cooled, cut them into halves and add to the mixture.
  5. Toss everything together until evenly coated.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For extra heat, leave some seeds in the jalapenos.
  • You can substitute regular bacon for turkey bacon if desired.
