Juicy Korean Style Pot Roast

A delicious and tender pot roast that combines traditional Korean flavors with comforting techniques.

  • 3 pounds beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 tablespoon ginger, grated
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 green onions, sliced
  • 1 tablespoon sesame oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large skillet, heat sesame oil over medium heat and brown the roast on all sides.
  3. In a large pot, combine soy sauce, brown sugar, rice vinegar, garlic, onion, and ginger.
  4. Add the browned roast, carrots, and celery to the pot.
  5. Cover the pot and transfer to the oven. Cook for 4 hours or until meat is fork-tender.
  6. Remove the pot from the oven and let the roast rest before slicing.
  7. Serve garnished with green onions.

Notes

  • For a spicier version, add red pepper flakes.
