Layered Sweet Potato Butternut Squash Carrot Lasagna Recipe

A delightful recipe layering sweet potatoes, butternut squash, and carrots for a wholesome lasagna.

Ingredients

  • 2 cups sweet potatoes, peeled and sliced
  • 2 cups butternut squash, peeled and sliced
  • 2 cups carrots, peeled and sliced
  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the sweet potatoes, butternut squash, carrots, olive oil, salt, pepper, and Italian seasoning.
  3. Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Layer 3 lasagna noodles over the sauce.
  5. Add a layer of the vegetable mixture.
  6. Spread ricotta cheese over the vegetables.
  7. Sprinkle a layer of mozzarella cheese.
  8. Repeat the layers (sauce, noodles, vegetables, ricotta, mozzarella) until all ingredients are used, finishing with noodles and sauce on top.
  9. Sprinkle Parmesan cheese over the final layer.
  10. Cover with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes until bubbly and golden.
  12. Let it cool for 10 minutes before slicing and serving.

Notes

  • Serve with a side salad for a complete meal.
  • This dish can be made ahead of time and refrigerated before baking.
