Layered Sweet Potato Butternut Squash Carrot Lasagna

A delicious and healthy layered lasagna made with sweet potatoes, butternut squash, and carrots.

Ingredients

  • 2 large sweet potatoes
  • 1 medium butternut squash
  • 3 large carrots
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes, butternut squash, and carrots.
  3. In a baking dish, layer the sliced vegetables and sprinkle with salt, pepper, and herbs.
  4. Add layers of ricotta and mozzarella cheese in between the vegetables.
  5. Repeat the layering until all ingredients are used, finishing with a layer of mozzarella and Parmesan cheese on top.
  6. Drizzle with olive oil and cover with foil.
  7. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes between the layers.
  • Consider using fresh herbs for a more vibrant flavor.
