- 2 cups leftover roast beef, shredded
- 1 cup frozen peas and carrots
- 1 onion, diced
- 2 tablespoons olive oil
- 2 cups mashed potatoes
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add the shredded roast beef, peas and carrots, beef broth, Worcestershire sauce, salt, and pepper. Stir and let simmer for 5 minutes.
