Leftover Roast Beef Shepherd’s Pie

A delicious and hearty way to use up leftover roast beef, this shepherd’s pie is the perfect comfort meal for any occasion.

  • 2 cups leftover roast beef, shredded
  • 1 cup frozen peas and carrots
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 2 cups mashed potatoes
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add the shredded roast beef, peas and carrots, beef broth, Worcestershire sauce, salt, and pepper. Stir and let simmer for 5 minutes.
  4. Transfer the beef mixture to a baking dish and spread the mashed potatoes on top.
  5. Bake for 25-30 minutes or until the top is golden brown.
