  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup vegetable broth
  • 4 cups mashed potatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion, carrots, celery, and garlic; sauté until soft.
  4. Stir in lentils, tomato paste, thyme, and rosemary; cook for another 2 minutes.
  5. Add vegetable broth and bring to a boil; reduce heat and simmer until lentils are tender.
  6. Spread the lentil mixture in a baking dish and top with mashed potatoes.
  7. Bake in the oven for 25-30 minutes or until the top is golden brown.
