Loaded Baked Potato Soup

  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 pound turkey bacon, cooked and crumbled

Instructions

  1. Peel and dice the russet potatoes.
  2. In a large pot, melt the butter over medium heat and sauté the onion until translucent.
  3. Add the diced potatoes and chicken broth to the pot, bring to a boil, then reduce to a simmer until the potatoes are tender.
  4. Use a potato masher to mash some of the potatoes for texture.
  5. Stir in the heavy cream, cheddar cheese, sour cream, garlic powder, and black pepper. Cook until the cheese is melted and the soup is heated through.
  6. Serve topped with crumbled turkey bacon.
