- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
- In a large pot, melt butter and sauté onions until translucent.
- Add diced potatoes and chicken broth. Bring to a boil and then simmer until potatoes are tender.
- Blend the mixture until smooth, then stir in heavy cream, garlic powder, and season with salt and pepper.
