Loaded Potato Soup

A creamy and hearty soup made with potatoes, cheese, and bacon, perfect for cozy nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter and sauté onions until translucent.
  2. Add diced potatoes and chicken broth. Bring to a boil and then simmer until potatoes are tender.
  3. Blend the mixture until smooth, then stir in heavy cream, garlic powder, and season with salt and pepper.
  4. Return to heat and add shredded cheddar and crumbled bacon. Stir until cheese is melted.
  5. Serve hot, garnished with additional bacon and cheese if desired.

Notes

  • This soup can be thickened further by mashing some of the potatoes after cooking.
  • Add additional toppings like green onions or sour cream for extra flavor.
